1. Recipe for protein plum cake

For this recipe you need Greek yogurt. This differs from the traditional one in two specific aspects, since it has a firm consistency and provides twice as much protein. Specifically, it has between 10% and 15%, compared to 6% that the common has.

  • 2 eggs and 2 whites (there are also proteins in them).
  • 200 grams of all-purpose white flour.
  • 100 grams of butter or 3 tablespoons of sunflower oil.
  • 1 pot of 125 grams of Greek yogurt.
  • 600 grams of plums.
  • 1/2 tablespoon of baking powder.
  • 180 grams of muscovado sugar.
  • 1 teaspoon of vanilla essence or orange zest.
  • 1 pinch of salt.

Step by Step

  • To start, wash the plums, remove the seeds and cut them into 4 parts. Once ready, reserve the pieces in a container.
  • Then sift the flour along with the baking powder and salt and set it aside for use when needed.
  • Next, place the butter (ideally it is smooth) and the sugar in a bowl and beat until you get a creamy mixture. For this step you can use your hands or a mixer.
  • Once you have integrated both ingredients, add the eggs and whites one by one. You should beat enough each time you add the egg before continuing to add the next one.
  • Now is the time to add the yogurt and vanilla essence or orange zest to the mix.
  • The next step is to add the flour that you reserved at the beginning. The important thing is that you do it in two parts and with enveloping movements to avoid the formation of lumps. We advise you to use a spatula for this.
  • Then, take the mixture to a greased circular mold (with butter and flour) that is between 20 and 25 centimeters in diameter.
  • On top of everything add the plums. Don’t worry if they sink during the cooking process.
  • To finish, take the dish to the preheated oven at 180 degrees for 50 minutes or until you poke it with a toothpick and it comes out clean.
